The Ancho pepper plant is a productive, 2–3 foot tall shrub that produces heart-shaped, 3–6 inch long peppers, known as Poblanos when green and Anchos when dried to a deep red or black. These mild (1,000–2,000 SHU) peppers have a rich, slightly sweet flavor, making them staples for roasting, stuffing, or making mole sauces.
